Vegetable Fried Rice

A flavorful vegetable fried rice that can be prepared and enjoyed in less than 1 hour! In many parts of the world rice it is an integral part of most meals. Fried rice is a yummy, comforting combination of all the things you love about rice.

Jamaican cuisine is synonymous with rice and peas. If you want to try something different at home this vegetable fried rice can easily be a one pot meal or you can enjoy it as a side with something else. Without a doubt, this vegetable fried rice is sure to be a family favorite. Plus, it is easy to make. If you like your vegetables cooked to crunchy perfection be sure to cook them in a separate pot, then add them in at the end. As always, add and subtract ingredients to make it perfect for you.

I used the following ingredients to make this vegetable fried rice:

  • Cooked white rice
  • Scrambled eggs
  • Mixed vegetables
  • Scallions, thyme, red and green bell peppers, & garlic (chopped)
  • Soy sauce
  • Butter (optional)
