Jamaican Rice and Peas

Rice and peas is synonymous with Jamaican cuisine. I get so many questions on how to make it and many people have told me that they think it is quite complicated to prepare. So, I had to share this simple, but oh so flavorful, good till the last bite recipe : )  You can shop my favorites via my Amazon store!

You’ll need the following: (This recipe easily serves 10 people)

Ingredients:

  • 8 Cups of Long Grain White Rice
  • 8 Cups Water
  • 4 Cups Dry Red Kidney Beans
  • 2 Cups Coconut Milk
  • 6 Stalks Scallion
  • 6 Sprigs Thyme
  • 3 Cloves of Garlic
  • 1 Whole Scotch Bonnet Pepper
  • Salt & Pepper

Directions:

  1. Soak kidney beans overnight
  2. Boil beans for about 45 minutes on medium high
  3. Once beans are tender add scallion, thyme, Scotch Bonnet pepper, and garlic
  4. Add coconut milk and bring to a boil
  5. Add rice then stir to combine
  6. Reduce heat to low
  7. Cover pot and allow to cook for ~25 minutes on low heat

    Hi! Do you boil the beans in the 8cups of water for 45mins? And if so, do you have to add any more water before putting the chopped ingredients in?

      Hello and thanks for stopping by! Yes it is boiled for 45 minutes or until the kidney beans become tender. The water will evaporate so it is important to maintain that level of water by adding water to the pot during that time. Hope that helps.

        Hi, do I use the water the beans are soaked in overnight to cook with or do I drain and rinse the beans, and use fresh water to cook with?

    Hi, I am 1 1/2 years married to my dear Jamaican deaf husband, me deaf too. He moved to America from Jamaica in a couple of years ago. He got tired of eating American foods. Last night and today I cooked first time spicy curry chicken, steamed cabbages and now, your recipe rice and peas. I started to learn that I used wrong kind of beans, Dominican Republic red kidney beans, It took three hours to get the beans tender this morning! Even I soaked the beans overnight last night. What kind of red beans do you use? I saw “Jamaican red peas” at Caribbean food market yesterday afternoon. Is it different from kidney beans? Thank you so much for this recipe. It’s helpful. I did half all recipe equal to a couple of persons. Deaf American wife

      Greetings and thanks for visiting my blog. I use any dry red kidney beans that I find at my local Caribbean market. I soak it overnight and then cook them. You could also use the Goya Red Kidney Beans in the can. In that way you would not have to soak them overnight and you could begin cooking them right away.
