Who else loves Jamaican Brown Stew Chicken?! This is one of those foods that the entire family will enjoy. My Brown Stew Chicken is yummy beyond words because it is so well seasoned. You can serve it with almost any side dish. Traditionally, it would be served with Rice and Peas and a simple salad. Here is my recipe below:
Ingredients:
- 3 lbs Chicken cut into pieces with skin removed
- 1 Large Onion chopped
- 1/2 Green, Red & Yellow Bell Peppers chopped
- 1 Scotch Bonnet Pepper chopped
- 3 Cloves Garlic chopped (or 3/4 Tbsp garlic powder)
- 1 Medium Tomato diced
- 1 Tbsp Browning
- 2 Tbsp Ketchup
- 1 Tbsp Bread Crumbs
- 1 Tbsp All Purpose Seasoning
- 1/2 Cup cooking oil
- 3 Cups water
- Salt & Pepper to taste
Directions:
- Begin by thoroughly washing chicken with water and vinegar (1 Tbsp) then pat dry
- Season chicken by adding onion, bell peppers, garlic, tomato and all purpose seasoning
- Rub everything in and marinate for at least 2 hours or overnight if you have the time
- Heat your pot and add cooking oil
- Begin adding the chicken to the pot, taking care to remove chopped ingredients before frying
- Fry chicken until golden brown on both sides
- Add everything back into the pot (chopped ingredients and chicken) + 3 cups of water
- Add browning and ketchup
- Cook chicken on medium low for 30-40 minutes, stirring occasionally
- Add bread crumbs, salt and pepper to taste.
- Stir it up and enjoy : )
