This meal is perfect for those times when you want something that’s yummy and fast to prepare. What takes this ordinary ‘tin’ salmon (canned salmon) from 0 to 100 is the addition of coconut milk. So, to ensure I am in and out of the kitchen in record time, the first thing I do is cook my rice. This salmon tastes delicious with Basmati rice. Once the rice is cooking, I begin chopping my onion, garlic, tomato and peppers. Open the salmon and coconut milk. Perfect time to also take out any vegetables you’ll be preparing to go with this meal.
- 1 can of salmon
- 1/4 cup coconut milk
- 1 medium onion
- 1/2 cup green and yellow bell peppers
- 1 tomato
- 2 whole garlic cloves OR 1/2 tablespoon garlic powder)
- 1 Scotch Bonnet Pepper (use less if you don’t want it too spicy)
- Salt and pepper to taste
